  • 1 can (15 ounces) corn, drained

  • 1 bag (9.25 ounces) corn chips (like Fritos)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sliced green onions
  • Sour cream, salsa, and guacamole for serving (optional)

Directions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Cook the Ground Beef:
    • In a large skillet, cook the ground beef over medium heat until browned and fully cooked, breaking it up into crumbles as it cooks. Drain any excess fat.
  3. Add Seasoning:
    • Stir in the taco seasoning mix and water. Simmer for 2-3 minutes until the mixture thickens slightly.
  4. Assemble the Casserole:
    • In a 9×13-inch baking dish, layer half of the corn chips on the bottom. Spread the cooked ground beef mixture evenly over the chips.
    • Add a layer of corn, followed by black beans and diced tomatoes with green chilies.
    • Top with the remaining corn chips, then sprinkle the shredded cheddar cheese evenly over the top.
  5. Bake:
