Kitchen Equipment Needed

  • Mixing bowls (large and medium)
  • Electric mixer or stand mixer
  • Baking sheets
  • Parchment paper
  • Measuring cups and spoons
  • Cooling rack
  • Spoon or cookie scoop

Ingredients

For the Oatmeal Cookies:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon molasses
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3 cups quick oats

For the Cream Filling:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup vegetable shortening
  • 2 cups powdered sugar
  • 1 tablespoon vanilla extract
  • 1-2 tablespoons milk (optional, for desired consistency)

Directions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Make the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
    • Beat in the eggs one at a time, then add the vanilla extract and molasses, mixing until well combined.
    • In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and ground cloves. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Stir in the oats until fully incorporated.
  3. Bake the Cookies:
    • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
  4. Prepare the Cream Filling:
    • In a medium mixing bowl, beat together the softened butter and vegetable shortening until smooth and creamy.
    • Gradually add the powdered sugar and vanilla extract, beating until light and fluffy. If the filling is too thick, add 1-2 tablespoons of milk until the desired consistency is reached.
  5. Assemble the Cream Pies:
