Lemon Crinkle Cookies

Equipment

  • Mixing bowls 
  • Hand mixer or stand mixer
  • Baking sheets
  • Parchment paper or silicone baking mat
  • Measuring cups and spoons
  • Small cookie scoop or tablespoon

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar for rolling

Instructions
 

  • Preheat oven and prepare baking sheets.
  • Cream butter and sugar, then add egg, lemon juice, and zest.
  • Combine dry ingredients and mix into wet ingredients.
  • Chill dough, roll into balls, and coat in powdered sugar.
  • Bake until set and lightly golden.
