- 1/2 cup unsalted butter softened
- 1 cup granulated sugar
- 1 egg
- 1 tablespoon fresh lemon juice
- Zest of 1 lemon
- 1 1/2 cups all-purpose flour

- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar for rolling
