  • Large skillet or pan
  • Large pot for boiling pasta
  • Cutting board and knife
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Colander for draining pasta

Ingredients:

  • 12 oz pasta (fettuccine, penne, or your choice)
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 small onion, diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • 2 cups fresh spinach (optional)
  • Fresh parsley or basil for garnish

Directions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest, then slice into strips.
  3. Prepare the Sauce: In the same skillet, add the minced garlic and diced onion. Sauté for 2-3 minutes until softened. Stir in the red pepper flakes, if using. Add the chicken broth and heavy cream, bringing the mixture to a simmer.
  4. Add the Cheese: Stir in the Parmesan and mozzarella cheeses, whisking until the cheese has melted and the sauce is creamy and smooth. Season with salt and pepper to taste.
  5. Combine and Finish: Add the cooked pasta and sliced chicken back into the skillet with the sauce. Toss everything together until the pasta and chicken are coated in the creamy sauce. If using spinach, stir it in now and cook until wilted.
  6. Serve: Garnish with fresh parsley or basil and serve immediately.
