Packed with oats, ripe bananas, and a handful of nutritious add-ins like nuts or dark chocolate, these cookies are quick to make and customizable to your taste.   • Fork or potato masher (for mashing bananas)
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper or silicone baking mat

Ingredients:

  • 2 ripe bananas, mashed
  • 1 ½ cups rolled oats
  • ½ cup peanut butter (or any nut butter of choice)
  • ⅓ cup honey or maple syrup (optional for sweetness)
  • ¼ cup dark chocolate chips (optional)
  • ¼ cup chopped nuts (optional)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • A pinch of salt

Directions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Mash Bananas: In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Mix Ingredients: Add the oats, peanut butter, honey (if using), vanilla extract, cinnamon, and a pinch of salt. Stir until well combined.
  4. Add Optional Ingredients: Fold in the dark chocolate chips and chopped nuts, if desired.
  5. Scoop Dough: Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheet, leaving some space between each cookie.
  6. Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  7. Cool: Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a cooling rack to cool completely.
