Ingredients

  • ¼ cup dark chocolate chips optional
  • ¼ cup chopped nuts optional
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • A pinch of salt

Instructions
 

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • Mash Bananas: In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  • Mix Ingredients: Add the oats, peanut butter, honey (if using), vanilla extract, cinnamon, and a pinch of salt. Stir until well combined.
  • Add Optional Ingredients: Fold in the dark chocolate chips and chopped nuts, if desired.
  • Scoop Dough: Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheet, leaving some space between each cookie.
  • Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Cool: Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a cooling rack to cool completely.
