**Garlic Parmesan Mashed Potato Cups** are a delightful twist on the classic mashed potatoes, turning them into perfectly portioned, crispy yet creamy bites with the irresistible flavors of garlic and Parmesan. They’re light, flavorful, and ideal as an appetizer, snack, or side dish. If you’re searching for a fun way to serve mashed potatoes with a touch of elegance and a bit of crunch, these cups are the perfect choice.

They pair the creaminess of mashed potatoes with a lightly crisped exterior, thanks to a quick bake, making them wonderfully versatile for any meal. And, just like classic mashed potatoes, they’re equally delicious without any garnishes or with your favorite herbs sprinkled on top.

Kitchen Equipment Needed:
– Muffin tin
– Medium saucepan
– Potato masher or electric mixer
– Measuring cups and spoons
– Mixing bowl
– Spoon

### Ingredients:
– 4 medium potatoes (Yukon Gold or Russet), peeled and chopped
– ¼ cup butter, melted
– 3 cloves garlic, minced
– ½ cup grated Parmesan cheese
– ¼ cup milk (or more as needed)
– 1 egg, lightly beaten
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)

### Directions:
1. **Cook the Potatoes**: Place potatoes in a medium saucepan, cover with water, and add a pinch of salt. Bring to a boil, then reduce heat to a simmer and cook for 15-20 minutes, or until potatoes are tender. Drain well.

2. **Prepare the Mashed Mixture**: Mash the potatoes with a potato masher or mixer until smooth. Add melted butter, minced garlic, Parmesan, milk, egg, salt, and pepper, mixing until fully combined. Adjust the milk if needed for a creamy, but still slightly thick consistency.

3. **Assemble the Cups**: Preheat the oven to 400°F (200°C). Lightly grease a muffin tin. Spoon the mashed potato mixture evenly into each cup of the muffin tin, filling about ¾ full. Smooth the tops with the back of a spoon.

4. **Bake**: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden and slightly crispy.

5. **Serve**: Let the cups cool for a few minutes, then carefully remove them from the tin. Garnish with fresh parsley and serve warm.
