Ingredients:

  • 1 lb ground chicken or turkey sausage (your choice)
  • 1 cup shredded cheddar cheese
  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • Optional: chopped green onions, bell peppers, or spinach for extra flavor

Directions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease or line a 12-cup muffin tin.
  2. Cook the Sausage: In a skillet, cook the ground sausage over medium heat until browned and fully cooked. Drain any excess grease and set aside.
  3. Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, and salt.
  4. Combine Wet Ingredients: In a separate bowl, whisk together the milk, eggs, and melted butter.
  5. Mix Together: Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix. Fold in the cooked sausage and shredded cheese, along with any optional add-ins.
  6. Fill Muffin Tin: Evenly distribute the batter into the muffin cups, filling each about ¾ full.
  7. Bake: Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  8. Cool and Serve: Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack. Serve warm or store for later.
