Ritz Cracker Salted Caramel Icebox Cake is a delightfully sweet and salty dessert that’s layered with creamy, caramel goodness and crunchy Ritz crackers. It’s not heavy or overly sweet either. I think it’s a perfect dessert for any time of the year, and if you’re not a fan of salted caramel, feel free to omit the salt.

It will still be undeniably delicious! If you’re looking for a light & airy dessert that’s not overly sweet, you’ve come to the right place. When you make a layered dessert with crunchy crackers and luscious caramel cream, you get the perfect cake. The addition of a touch of salt just sends it over the top. I’ve really been in the mood for a simple yet decadent dessert, and this dreamy cake reminds me of comfort and indulgence. Not a fan of salted caramel? Don’t worry, it’s still delicious without it.

Kitchen Equipment Needed:

  • Mixing bowls
  • Electric mixer
  • 9×13-inch baking dish
  • Spatula
  • Measuring cups and spoons

Ingredients:

  • 2 sleeves Ritz crackers
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup caramel sauce
  • 1 teaspoon sea salt flakes (optional)
  • Extra caramel sauce for drizzling (optional)

Directions:

  1. Prepare the Whipped Cream:
    • In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
    • Using an electric mixer, beat the mixture on high speed until stiff peaks form.
  2. Prepare the Caramel Cream:
    • In a separate bowl, mix the sweetened condensed milk and caramel sauce until well combined.
    • Gently fold the caramel mixture into the whipped cream until fully incorporated.
  3. Assemble the Cake:
    • In a 9×13-inch baking dish, spread a thin layer of the caramel cream mixture on the bottom.
    • Arrange a single layer of Ritz crackers over the caramel cream.
    • Spread a third of the remaining caramel cream over the Ritz crackers.
    • Repeat the layers twice more, ending with a layer of caramel cream on top.
  4. Chill the Cake:
    • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the crackers to soften.
  5. Serve:
    • Before serving, sprinkle the top with sea salt flakes, if desired, and drizzle with extra caramel sauce.
