In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
Using an electric mixer, beat the mixture on high speed until stiff peaks form.
Prepare the Caramel Cream:
In a separate bowl, mix the sweetened condensed milk and caramel sauce until well combined.
Gently fold the caramel mixture into the whipped cream until fully incorporated.
Assemble the Cake:
In a 9x13-inch baking dish, spread a thin layer of the caramel cream mixture on the bottom.
Arrange a single layer of Ritz crackers over the caramel cream.
Spread a third of the remaining caramel cream over the Ritz crackers.
Repeat the layers twice more, ending with a layer of caramel cream on top.
Chill the Cake:
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the crackers to soften.
Serve:
Before serving, sprinkle the top with sea salt flakes, if desired, and drizzle with extra caramel sauce.
