Pineapple Contrasting Cake

Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- 1 cup fresh pineapple chopped
- ½ cup pineapple juice for glaze
- 1 cup granulated sugar for glaze
- 1 tablespoon lemon juice for glaze
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch square cake pan.
- In a mixing bowl, combine flour, baking powder, and salt.
- In another bowl, beat together sugar, eggs, and vanilla until smooth. Mix in the flour mixture alternately with the milk until combined. Stir in the chopped pineapple.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
- In a small saucepan, combine pineapple juice, sugar, and lemon juice for the glaze. Bring to a boil and simmer until thickened.
- Drizzle the glaze over the cooled cake and serve
