Peanut Butter Brownie Swirl Cookies are a delightful fusion of rich, fudgy brownies and creamy peanut butter. These cookies are perfect for any occasion, whether you’re looking for a comforting treat or an impressive dessert for a gathering. Kitchen Equipment Needed:

  • Mixing bowls
  • Hand mixer or stand mixer
  • Baking sheets
  • Parchment paper
  • Cookie scoop or tablespoon
  • Cooling rack

Ingredients:

Brownie Dough:

  • 1/2 cup (1 stick) unsalted butter
  • 4 oz bittersweet chocolate, chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Peanut Butter Dough:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Directions:

  1. Prepare the Brownie Dough:
    • In a microwave-safe bowl, melt the butter and bittersweet chocolate in 30-second intervals, stirring between each until smooth.
    • In a large bowl, beat the melted chocolate mixture with granulated sugar until well combined.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
    • Gradually add the dry ingredients to the chocolate mixture, mixing until just combined. Set aside.
  2. Prepare the Peanut Butter Dough:
    • In a large bowl, beat together the softened butter and peanut butter until creamy.
    • Add granulated sugar and brown sugar, and beat until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
    • Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.
  3. Combine and Bake:
    • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
    • Using a cookie scoop or tablespoon, take equal portions of brownie dough and peanut butter dough. Press them together gently and roll into balls.
    • Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
    • Using a butter knife or toothpick, gently swirl the doughs together to create a marbled effect.
    • Bake for 10-12 minutes or until the edges are set and the centers are slightly soft.
    • Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a cooling rack to cool completely.
