No-Bake Chocolate Eclair Cake is a wonderfully easy and indulgent dessert that layers creamy vanilla pudding and whipped topping between graham crackers, all topped with a rich chocolate glaze. It’s not heavy or overly sweet either. I think it’s a perfect dessert for any occasion, and if you’re not a fan of chocolate glaze, feel free to omit it or replace it with caramel.

It will still be undeniably delicious! If you’re looking for a light & creamy dessert that’s not overly sweet, you’ve come to the right place. When you make this no-bake treat with layers of graham crackers and a smooth vanilla filling, you get the perfect cake. The addition of chocolate glaze just sends it over the top. I’ve really been in the mood for something simple and delightful, and this dreamy cake reminds me of classic eclairs. Not a fan of chocolate? Don’t worry, it’s still delicious without it.

  • 9×13 inch baking dish
  • Microwave-safe bowl (for the glaze)

Ingredients:

  • 2 packages (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping, thawed
  • 1 box (14.4 oz) graham crackers
  • 1 can (16 oz) chocolate frosting

Directions:

  1. Prepare the Pudding: In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and thickened. Fold in the whipped topping until well combined.
  2. Layer the Cake: In a 9×13 inch baking dish, arrange a single layer of graham crackers to cover the bottom. Spread half of the pudding mixture over the graham crackers. Add another layer of graham crackers, then spread the remaining pudding mixture on top. Finish with a final layer of graham crackers.
  3. Make the Chocolate Glaze: In a microwave-safe bowl, microwave the chocolate frosting for 30 seconds or until it is soft enough to spread. Stir well and pour over the top layer of graham crackers, spreading evenly.
  4. Chill the Cake: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the graham crackers to soften and the flavors to meld together.
