Ingredients

  • Muffins:
    • 1 1/2 cups all-purpose flour

  • Crumb Topping:
    • 1/4 cup all-purpose flour
    • 1/4 cup brown sugar
    • 1/2 teaspoon ground cinnamon
    • 2 tablespoons cold butter, cubed

Directions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Line a muffin tin with paper liners or grease the tin well.
  2. Prepare the Crumb Topping:
    • In a small bowl, mix together the flour, brown sugar, and cinnamon.
    • Add the cold, cubed butter and use a fork or pastry cutter to blend until the mixture resembles coarse crumbs.
    • Set aside.
  3. Mix the Dry Ingredients:
    • In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  4. Mix the Wet Ingredients:
    • In another bowl, whisk together the milk, vegetable oil, vanilla extract, and egg until well combined.
  5. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined.
    • Gently fold in the diced nectarines.
  6. Fill the Muffin Tin:
    • Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
