Magic Lemon Cobbler is a delightful dessert that magically separates into layers of lemon pudding and cake while baking. It’s tangy, sweet, and incredibly easy to make, making it a perfect treat for any occasion.

 

Kitchen Equipment Needed:

  • 9×13 inch baking dish
  • Mixing bowls
  • Whisk or electric mixer
  • Saucepan

Ingredients:

For the Lemon Layer:

  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/3 cup fresh lemon juice (about 2-3 lemons)
  • Zest of 1 lemon
  • 2 tablespoons unsalted butter, melted

For the Cake Layer:

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

To Serve (Optional):

  • Powdered sugar, for dusting
  • Fresh berries, for garnish

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Prepare the Lemon Layer:
    • In a medium saucepan, whisk together the sugar, flour, and salt.
    • Gradually whisk in the milk and lemon juice until smooth.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil (about 5 minutes).
    • Remove from heat and stir in the lemon zest and melted butter. Set aside.
  3. Prepare the Cake Layer:
    • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
    • Stir in the milk, melted butter, and vanilla extract until smooth.
  4. Assemble and Bake:
    • Pour the prepared lemon layer mixture into the greased baking dish, spreading it evenly.
    • Spoon the cake batter over the lemon mixture, spreading it gently to cover as much as possible.
    • Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the lemon layer is bubbling around the edges.
  5. Serve:
    • Remove from the oven and let cool for about 10 minutes before serving.
    • Dust with powdered sugar if desired and garnish with fresh berries.
    • Serve warm or at room temperature.

    • Magic Lemon Cobbler is best served fresh, but leftovers can be stored covered in the refrigerator for up to 3 days. Reheat gently in the microwave before serving if desired.
