Kitchen Equipment Needed:

  • Whisk
  • Deep fryer or large deep skillet
  • Slotted spoon or tongs

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil (for frying)

Directions:

  1. Marinate the Chicken:
    • In a mixing bowl, combine the buttermilk and egg. Whisk until well combined.
    • Add the chicken pieces to the buttermilk mixture, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best results.
  2. Prepare the Breading:
    • In another mixing bowl, combine the flour, panko breadcrumbs, garlic powder, paprika, salt, and black pepper. Mix well.
  3. Bread the Chicken:
    • Remove the chicken from the buttermilk mixture, allowing any excess to drip off.
    • Dredge the chicken pieces in the flour mixture, pressing gently to ensure the coating sticks. Place the breaded chicken on a baking sheet.
  4. Fry the Chicken:
    • In a deep fryer or large deep skillet, heat vegetable oil to 350°F (175°C).
    • Carefully add the breaded chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan.
    • Fry until golden brown and cooked through, about 4-5 minutes, turning occasionally for even cooking.
    • Use a slotted spoon or tongs to transfer the fried chicken to a plate lined with paper towels to drain any excess oil.
  5. Bake the Chicken (Optional):
    • Preheat your oven to 400°F (200°C).
    • Place the breaded chicken pieces on a baking sheet lined with parchment paper or a silicone baking mat.
    • Lightly spray the chicken with cooking spray.
    • Bake for 15-20 minutes, or until golden brown and cooked through, turning halfway through for even baking.
  6. Serve:
