Kitchen Equipment Needed:

  1. 9×13-inch baking pan
  2. Mixing bowls
  3. Whisk or electric mixer
  4. Toothpick or skewer
  5. Rubber spatula

Ingredients:

For the Cake:

  • 1 box yellow cake mix (plus ingredients called for on the box, such as eggs, oil, and water)

For the Pineapple Filling:

  • 1 can (20 ounces) crushed pineapple, drained
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 cup cold milk

For the Topping:

  • 1 container (8 ounces) frozen whipped topping, thawed
  • 1 cup sweetened shredded coconut
  • Maraschino cherries, for garnish (optional)

Directions:

  1. Prepare the Cake: Preheat your oven according to the instructions on the cake mix box. Grease and flour a 9×13-inch baking pan.
  2. Bake the Cake: Prepare the cake batter according to the instructions on the box. Pour the batter into the prepared baking pan and bake according to the package instructions. Remove from the oven and let cool for 10 minutes.
  3. Create Holes in the Cake: Using the handle of a wooden spoon or a skewer, poke holes all over the surface of the cake.
  4. Make the Pineapple Filling: In a mixing bowl, combine the drained crushed pineapple, instant vanilla pudding mix, and cold milk. Whisk until well combined and smooth.
  5. Fill the Holes: Pour the pineapple filling mixture over the warm cake, making sure to fill all the holes. Use a rubber spatula to spread the filling evenly over the cake.
  6. Chill the Cake: Place the cake in the refrigerator and let it chill for at least 1 hour, or until the filling is set.
  7. Add the Topping: Once the filling is set, spread the thawed whipped topping over the cake. Sprinkle the shredded coconut evenly over the whipped topping.
  8. Garnish and Serve: If desired, garnish the cake with maraschino cherries. Slice the cake and serve chilled.
