Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped (optional)
- 3 garlic cloves, minced
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions:
In a bowl, combine parsley, cilantro, garlic, olive oil, red wine vinegar, lemon juice, oregano, red pepper flakes, salt, and pepper. Mix well to create the chimichurri sauce. Reserve half of the chimichurri sauce for serving and use the rest as a marinade.
