Classic Creamy Rice Pudding is a timeless dessert that’s rich, creamy, and filled with comforting flavors. It’s not heavy or overly sweet, making it a perfect treat any time of the year. If you’re looking for a light and satisfying dessert that’s not overly indulgent, you’ve come to the right place.

When you cook tender rice and blend it with a silky, vanilla-infused custard, you get the perfect pudding. The simplicity of this dish just sends it over the top. This dreamy pudding reminds me of cozy evenings and family gatherings. Not a fan of raisins? Don’t worry, it’s still delicious without them.

  • Whisk
  • Wooden spoon
  • Measuring cups and spoons
  • Mixing bowl

Ingredients

For the Rice Pudding:

  • 1/2 cup medium-grain rice (such as Arborio)
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs, lightly beaten
  • 1/2 cup raisins (optional)
  • Ground cinnamon for garnish (optional)

Directions

  1. Prepare the Rice:
    1. In a medium saucepan, combine the rice and 1 1/2 cups of water.
    2. Bring to a boil over medium-high heat.
    3. Reduce the heat to low, cover, and simmer until the rice is tender and the water is absorbed, about 15-20 minutes.
  2. Cook the Pudding:
    1. Add 3 1/2 cups of milk, sugar, and salt to the cooked rice.
    2. Cook over medium heat, stirring frequently, until the mixture thickens and the rice is very soft, about 20-25 minutes.
  3. Finish the Pudding:
    1. In a small mixing bowl, whisk together the remaining 1/2 cup of milk, beaten eggs, and vanilla extract.
    2. Gradually stir this mixture into the rice pudding.
    3. Cook for an additional 2-3 minutes, stirring constantly, until the pudding thickens further and coats the back of a spoon.
    4. If using raisins, stir them in at this point.
  4. Serve:
    1. Remove the pudding from the heat and let it cool slightly.
    2. Serve warm or chilled, garnished with a sprinkle of ground cinnamon if desired.
