Ingredients

  • 1 lb 450 g cheese tortellini, fresh or frozen
  • 1 lb 450 g ground beef
  • 1 medium onion thinly sliced
  • 1 large green bell pepper thinly sliced
  • 3 garlic cloves minced
  • 1 cup 240 ml beef broth
  • 1 cup 240 ml heavy cream
  • 8 slices provolone cheese torn into pieces
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  • Cook the Tortellini
  • Prepare the tortellini according to package instructions. Drain and set aside.
  • Sauté the Vegetables
  • Heat olive oil in a large skillet over medium heat. Add the sliced onions and bell peppers, and sauté until softened, about 5-7 minutes. Add garlic and cook for another minute. Remove from the skillet and set aside.
  • Brown the Ground Beef
  • In the same skillet, cook the ground beef over medium-high heat until browned and fully cooked. Drain any excess grease.
  • Prepare the Sauce
  • Lower the heat to medium. Return the onions and peppers to the skillet with the beef. Add beef broth and heavy cream, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
  • Add the Cheese and Tortellini
  • Stir in the cooked tortellini. Scatter the provolone pieces over the top and stir gently until melted and fully incorporated into the sauce.
  • Season and Serve
  • Taste and adjust seasoning with salt and pepper. Garnish with chopped parsley if desired and serve hot.
