Cook the Tortellini
Prepare the tortellini according to package instructions. Drain and set aside.
Sauté the Vegetables
Heat olive oil in a large skillet over medium heat. Add the sliced onions and bell peppers, and sauté until softened, about 5-7 minutes. Add garlic and cook for another minute. Remove from the skillet and set aside.
Brown the Ground Beef
In the same skillet, cook the ground beef over medium-high heat until browned and fully cooked. Drain any excess grease.
Prepare the Sauce
Lower the heat to medium. Return the onions and peppers to the skillet with the beef. Add beef broth and heavy cream, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
Add the Cheese and Tortellini
Stir in the cooked tortellini. Scatter the provolone pieces over the top and stir gently until melted and fully incorporated into the sauce.
Season and Serve
Taste and adjust seasoning with salt and pepper. Garnish with chopped parsley if desired and serve hot.
