Banana Pudding Ice Cream is a delightfully creamy and rich treat that’s swirled with chunks of ripe bananas, vanilla wafers, and a hint of vanilla pudding flavor. It’s not overly sweet either. I think it’s a perfect summertime dessert, and if you’re not a fan of bananas, feel free to adjust the recipe.

When you make a creamy ice cream base and pair it with chunks of ripe bananas and vanilla wafers, you get the perfect frozen treat. The addition of vanilla pudding just sends it over the top. I’ve really been in the mood for summer to arrive and this dreamy ice cream reminds me of sunny days and picnics. Not a fan of bananas? Don’t worry, it’s still delicious with other fruit or mix-ins.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1/2 cup vanilla wafer cookies, crushed
  • 1/2 cup prepared vanilla pudding (store-bought or homemade)

Directions

  1. Prepare the Ice Cream Base:
    • In a mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, and vanilla extract until the sugar is dissolved.
  2. Mix in the Bananas and Pudding:
    • Fold in the mashed bananas and prepared vanilla pudding until well combined.
  3. Chill the Mixture:
    • Cover the mixture and refrigerate for at least 1 hour, or until it is thoroughly chilled.
  4. Churn the Ice Cream:
    • Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.
  5. Add the Cookies:
    • During the last 5 minutes of churning, add the crushed vanilla wafer cookies to the ice cream maker and allow them to mix in evenly.
  6. Freeze the Ice Cream:
    • Transfer the churned ice cream to a freezer-safe container and freeze for at least 2 hours, or until it is firm enough to scoop.
