This Apricot Dijon Glazed Salmon

Ingredients
  

  • 4 salmon fillets skin-on or skinless, about 6 oz each
  • 1/4 cup apricot preserves
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika optional, for added depth
  • Salt and black pepper to taste
  • 1 tablespoon olive oil for searing, if pan-cooking
  • Fresh parsley or chives chopped (for garnish)
  • Lemon wedges for serving

Instructions
 

  • Prepare the Glaze:
  • In a small bowl, whisk together the apricot preserves, Dijon mustard, soy sauce, garlic powder, smoked paprika (if using), and a pinch of salt and pepper. Set aside.
  • Preheat Oven or Grill (if Baking or Grilling):
  • For baking, preheat your oven to 375°F (190°C).
  • For grilling, preheat the grill to medium heat and lightly oil the grates.
  • Cook the Salmon:
  • Pan-Searing: Heat olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper. Place them skin-side down (if applicable) in the skillet and sear for 3-4 minutes until golden. Flip the salmon, brush generously with the apricot Dijon glaze, and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Baking: Place the salmon fillets on a parchment-lined baking sheet. Brush each fillet generously with the apricot Dijon glaze. Bake for 12-15 minutes, or until the salmon reaches an internal temperature of 145°F (63°C).
  • Grilling: Place the salmon fillets on the grill, skin-side down if applicable. Brush the tops with the apricot Dijon glaze and grill for 5-6 minutes per side, glazing again after flipping, until cooked through.
  • Garnish and Serve:
  • Transfer the salmon to a serving plate and garnish with fresh parsley or chives. Serve with lemon wedges on the side for a bright citrus finish.
