  • 1.5 cups all-purpose flour Sifted
  • 1 cup sugar
  • 1 tsp baking powder
  • 0.25 tsp salt

Wet Ingredients

  • 0.5 cups unsalted butter, softened At room temperature
  • 1 cup cream cheese, softened At room temperature
  • 2 large eggs At room temperature
  • 1 tsp vanilla extract
  • 1 cup peach puree Fresh or canned
  • 0.5 cups honey

Fruits

  • 1 cup diced fresh peaches Peeled and pitted

Preparation

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  • In a bowl, whisk together the flour, baking powder, and salt. Set it aside.
  • In a separate mixing bowl, beat together the softened butter and sugar until light and fluffy.
  • Incorporate the cream cheese into the butter and sugar mixture, blending until smooth.
  • Next, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the peach puree, mixing just until combined.
  • Gently fold the diced fresh peaches into the batter.
  • Pour the batter into the prepared cupcake liners, filling each about 2/3 full.

Baking

  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool completely before frosting with your favorite cream cheese frosting.

Notes

For best flavor, use ripe, fresh peaches. Consider adding lemon zest to the frosting for a citrus twist. Store leftovers in an airtight container in the refrigerator or freeze for up to three months.
