Stuffed Lemon Cookies

- For the Cookies:
- 1/2 cup unsalted butter softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice

- 4 oz cream cheese softened
- 1/4 cup powdered sugar
