  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper or silicone baking mat
  • Small cookie scoop
  • Spatula

Ingredients
  

  • For the Cookies:
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • For the Filling:
  • 4 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice

Instructions
 

  • Prepare the cream cheese filling and freeze.
  • Mix cookie dough and wrap it around the filling.
  • Bake until set, cool, and enjoy!
