Soft and Chewy Cinnamon Sugar Churro Cookies

Ingredients
  

  • For the Cookies
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • For the Cinnamon Sugar Coating
  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat and Prepare Baking Sheet
  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.
  • Make the Cookie Dough
  • In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  • Prepare the Cinnamon Sugar Coating
  • In a small bowl, combine the granulated sugar and cinnamon for the coating.
  • Shape and Coat the Cookies
  • Roll the cookie dough into 1-inch balls (about 1 tablespoon each). Roll each dough ball in the cinnamon sugar mixture until fully coated.
  • Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake the Cookies
  • Bake the cookies for 10-12 minutes, or until the edges are set but the centers are still soft.
  • Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  • Serve and Enjoy
