  • 2 tablespoons olive oil For frying
  • 1 pound bok choy, trimmed and chopped Fresh and vibrant for the best flavor and texture
  • 3 cloves garlic, minced Adjust according to taste
  • 1 tablespoon fresh ginger, minced Adds warmth and flavor
  • Salt and pepper, to taste For seasoning

Preparation

  • Begin by washing the bok choy thoroughly under running water. Trim the ends and chop into bite-sized pieces.
  • Mince the garlic and ginger, making sure to have these ready for when the cooking starts.

Cooking

  • In a large skillet or wok, heat the olive oil over medium-high heat until it shimmers, about 1-2 minutes.
  • Add the minced garlic and ginger to the skillet, stirring continuously and sauté for about 30 seconds until fragrant, being careful not to let it burn.
  • Toss in the chopped bok choy and stir well to combine. Sauté for about 3-5 minutes, tossing occasionally until it wilts and becomes tender but still retains a bit of crunch.
  • Sprinkle with salt and pepper to taste, mixing it in just before taking the skillet off the heat.
  • Transfer the sautéed bok choy to a serving platter and enjoy right away while it’s beautifully vibrant and warm!

Notes

Fresh bok choy should be bright green and crisp. For added flavor, consider a splash of soy sauce or sesame seeds. Store leftovers in an airtight container in the refrigerator for up to 3 days.
