  • 1 cup rolled oats
  • 1 cup almond flour or any nut-based flour
  • 1/3 cup chopped dates pitted, for sweetness

Wet Mixture

  • 1/2 cup almond butter or tahini
  • 1/4 cup pure maple syrup or honey
  • 1/2 teaspoon sea salt plus extra for topping
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips optional, for drizzling

Preparation

  • In a mixing bowl, combine the rolled oats, almond flour, and chopped dates. Stir until well coated.
  • In a small saucepan over low heat, melt the almond butter (or tahini) with the maple syrup and vanilla extract until smooth and creamy, about 3-5 minutes.
  • Pour the wet mixture over the dry ingredients and mix until everything is well incorporated. It should be slightly sticky but hold its shape.
  • Line an 8×8 inch square baking dish with parchment paper. Transfer the mixture into the dish and press down evenly to create a flat layer.
  • Cover with plastic wrap and refrigerate for at least 1 hour to set.
  • Once firm, remove from the fridge and cut into squares. Sprinkle with a pinch of sea salt.
  • Enjoy right away, or drizzle with melted chocolate for an extra treat.

Notes

Substitutions: Replace almond butter with sunflower seed butter for a nut-free option, or swap oats for gluten-free alternatives. Allowing at least one hour for setting will yield the best texture.
