Preparation

  • Gather all your ingredients and tools, including a heavy-bottomed saucepan, a candy thermometer, a spatula, and a baking sheet lined with parchment paper.

Cooking

  • In the heavy-bottomed saucepan, combine the unsalted butter, granulated sugar, brown sugar, and water. Set the saucepan over medium heat.
  • Keep stirring the mixture until the sugar dissolves and the butter melts. Once melted, stop stirring and allow it to come to a boil.
  • Attach your candy thermometer to the pot (ensure the bulb is submerged) and allow the mixture to boil without stirring.
  • Cook until it reaches 300°F (hard crack stage), which may take around 15-20 minutes.
  • Remove from heat and quickly stir in the vanilla extract.
  • Pour the toffee onto the prepared baking sheet, spreading it evenly.
  • If using chocolate chips or nuts, sprinkle them over the toffee while it is still warm.
  • Allow the toffee to set completely, which takes about 1-2 hours.
  • Once set, break it into pieces and enjoy your delicious Melt In Your Mouth Toffee!

Notes

Store in an airtight container at room temperature for up to 2 weeks. Freeze for up to 3 months, well-wrapped. Thaw at room temperature for best texture.
