  • 1/2 cup powdered sugar
  • 2 tablespoons lime zest Freshly grated for best flavor.
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • to taste additional powdered sugar for dusting Dust after cooling.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy.
  • Stir in lime zest and lime juice to the butter mixture.
  • In another bowl, sift together salt, flour, and cornstarch, then gradually mix into the wet mixture until a soft dough forms.
  • Scoop tablespoonfuls of dough and roll into balls. Place on a parchment-lined baking sheet about 2 inches apart.

Baking

  • Bake cookies for 10-12 minutes, or until lightly golden at the edges but still soft in the center.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
  • Once completely cool, dust with powdered sugar.

Notes

Substitutions: Use lemon zest for a different citrus flavor. Avoid over-baking. Ensure butter is softened for proper texture. Store in an airtight container at room temperature for up to one week; freeze for longer storage.
