Ingredients
  

  • 1 ½ pounds ground chicken
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves minced
  • ½ cup breadcrumbs plain or Italian-seasoned
  • 1 large egg lightly beaten
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded mozzarella cheese optional, for a cheesy center
  • 2 tablespoons chopped parsley for garnish
  • For the Topping:
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • 1 teaspoon minced garlic

Instructions
 

  • Preheat Oven:
  • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  • Mix Ingredients:
  • In a large mixing bowl, combine the ground chicken, Parmesan cheese, minced garlic, breadcrumbs, beaten egg, Italian seasoning, salt, and pepper. Mix until well combined but do not overmix.
  • Shape the Meatloaf:
  • Transfer half of the chicken mixture to the prepared loaf pan and press it evenly into the bottom. If using mozzarella for a cheesy center, layer it over the meat mixture, leaving a small border around the edges. Top with the remaining chicken mixture and press gently to seal.
  • Prepare the Topping:
  • In a small bowl, mix the grated Parmesan, melted butter, and minced garlic. Spread this mixture evenly over the top of the meatloaf.
  • Bake:
  • Place the meatloaf in the preheated oven and bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
  • Rest and Serve:
  • Remove the meatloaf from the oven and let it rest for 5–10 minutes before slicing. Garnish with chopped parsley for a fresh touch.
