- 1 ½ pounds ground chicken
- ½ cup grated Parmesan cheese
- 3 garlic cloves minced
- ½ cup breadcrumbs plain or Italian-seasoned
- 1 large egg lightly beaten
- 1 tablespoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup shredded mozzarella cheese optional, for a cheesy center
- 2 tablespoons chopped parsley for garnish
- For the Topping:
- ¼ cup grated Parmesan cheese
- 2 tablespoons melted butter
- 1 teaspoon minced garlic
Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
Mix Ingredients:
In a large mixing bowl, combine the ground chicken, Parmesan cheese, minced garlic, breadcrumbs, beaten egg, Italian seasoning, salt, and pepper. Mix until well combined but do not overmix.
Shape the Meatloaf:
Transfer half of the chicken mixture to the prepared loaf pan and press it evenly into the bottom. If using mozzarella for a cheesy center, layer it over the meat mixture, leaving a small border around the edges. Top with the remaining chicken mixture and press gently to seal.
Prepare the Topping:
In a small bowl, mix the grated Parmesan, melted butter, and minced garlic. Spread this mixture evenly over the top of the meatloaf.
Bake:
Place the meatloaf in the preheated oven and bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
Rest and Serve:
Remove the meatloaf from the oven and let it rest for 5–10 minutes before slicing. Garnish with chopped parsley for a fresh touch.
