Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 3 teaspoons vanilla extract
  • 3 eggs
  • 1 cup chopped walnuts (optional)
  • ¼ cup white sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini

Instructions

  • The first step in baking is to heat the oven to 350 degrees F (175 degrees C), and then prepare two 8 x 4-inch loaf pans by greasing and dusting them with flour.
  • Take a medium-sized bowl and sift in the flour, baking soda, salt, baking powder, and cinnamon, making sure they are evenly mixed.
  • Take a large bowl and beat eggs until they are light and frothy.
  • Incorporate oil, sugar, and vanilla into the whisked eggs.
  • Blend the sifted ingredients with the creamed mixture and beat until the mixture is smooth.
  • Incorporate the zucchini and nuts into the batter until evenly distributed.
  • Put the batter into the pans that have been prepared ahead of time.
  • Bake the bread until it is completely cooked, which usually takes 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
  • Wait for 10 minutes until the bread cools down in the pan, and then transfer it to the wire racks for complete cooling.
