  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 1 medium cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1-2 cloves garlic (minced, to taste)
  • Salt and pepper (to taste)

Preparation

  • Drain and rinse the chickpeas in a colander and allow them to sit while you prepare the veggies.
  • Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion. Chop the fresh parsley finely.
  • In a small bowl, mix the Greek yogurt, lemon juice, minced garlic, salt, and pepper until well-combined.
  • In a larger mixing bowl, combine the chickpeas, chopped veggies, and tzatziki dressing. Toss gently until everything is coated.
  • Taste and adjust seasoning by adding more salt, pepper, or lemon juice as desired.
  • Serve immediately, or refrigerate until ready to serve.

Notes

For optimal flavor, let the salad chill in the refrigerator for about 30 minutes before serving. Store leftovers in an airtight container in the fridge for up to 3 days. Avoid freezing.
