Ingredients
  

  • 1 pound ground beef
  • 15 ounces black beans, drained and rinsed
  • 3 cups crushed tortilla chips, divided
  • 2 cups shredded Mexican blend cheese, divided
  • 10 ounces diced tomatoes and green chilies, drained
  • 15 ounces corn, drained
  • 1 ounce taco seasoning mix
  • ½ cup water

Instructions
 

  • Preheating the oven to 375°F is the first step.
  • Following that, brown the ground beef in a large skillet over medium heat. Once cooked, make sure to drain any excess fat from the skillet.
  • Mix black beans, diced tomatoes, corn, and green chilies in the skillet.
  • Add taco seasoning mix and water to it and stir the mixture to blend it perfectly.
  • In a baking dish that measures 9x13 inches, spread an even layer of half of the crushed tortilla chips on the bottom.
  • Use a spoon to spread the beef mixture onto the tortilla chips.
  • Sprinkle the beef mixture with 1 cup of shredded cheese, making sure it's well distributed.
  • Then, layer the remaining tortilla chips, beef mixture, and shredded cheese in the same manner.
  • Using foil, cover the baking dish and cook for 25 minutes.
  • Take off the foil and continue cooking for an additional 10-15 minutes, or until the cheese is entirely melted and begins to bubble.
  • Before serving, it is recommended to wait for the casserole to cool down for about 5-10 minutes.
