Ingredients
  

For the crust

  • 1.5 cups 1 ½ cups all-purpose flour
  • 0.5 cups ½ cup granulated sugar
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.5 teaspoon ½ teaspoon vanilla extract

For the cheesecake layer

  • 8 oz 8 oz cream cheese, softened
  • 0.5 cups ½ cup granulated sugar
  • 1 large 1 large egg
  • 1 teaspoon 1 teaspoon vanilla extract

For the blueberry topping

  • 2 cups 2 cups fresh blueberries
  • 0.25 cups ¼ cup granulated sugar
  • 1 tablespoon 1 tablespoon cornstarch
  • 1 tablespoon 1 tablespoon lemon juice

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, sugar, melted butter, and vanilla extract. Mix until crumbly. Press this mixture evenly into the bottom of a greased 9x9 inch baking pan.
  • Bake the crust in preheated oven for 10-12 minutes or until lightly golden. Remove and let it cool slightly.
  • In another bowl, beat together the cream cheese and sugar until smooth. Add in the egg and vanilla extract, mixing until well combined. Pour this mixture over the baked crust.
  • Return to the oven and bake for an additional 15-20 minutes, or until the cheesecake is set but still slightly jiggly in the center.
  • In a small saucepan, combine fresh blueberries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens and bubbles, about 5-7 minutes.
  • Once the cheesecake layer is set, pour the blueberry mixture over the top, spreading it evenly.
  • Return to the oven for another 10 minutes. Then, cool completely at room temperature before slicing into squares.

Notes

Enjoy these bars with a dollop of whipped cream or a scoop of vanilla ice cream. They can be stored in an airtight container in the refrigerator for up to 5 days, or frozen for up to three months.
