Wash and halve the potatoes. Mince the garlic and measure out the spices.
Layer the Crockpot
Add the halved potatoes to the bottom of the slow cooker. Sprinkle with a bit of salt, pepper, and paprika.
Add the Chicken
Place the chicken thighs or breasts on top of the potatoes. Season generously with Italian seasoning, garlic, salt, and pepper.
Make the Sauce
In a small bowl, mix the melted butter, heavy cream, and Parmesan cheese. Pour this mixture evenly over the chicken and potatoes.
Cook
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
Serve
Once done, garnish with fresh parsley and additional Parmesan, if desired. Serve warm.
