Crockpot Garlic Parmesan Chicken and Potatoes

Crockpot Garlic Parmesan Chicken and Potatoes is the perfect meal for busy evenings when you need something hearty, flavorful, and easy to prepare.

Equipment

  • Slow cooker
  • Measuring cups and spoons
  • Cutting board and knife
  • Mixing bowl

Ingredients
  

  • 4 boneless skinless chicken thighs or breasts
  • 1 lb baby potatoes halved
  • 3 garlic cloves minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 3 tbsp unsalted butter melted
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Wash and halve the potatoes. Mince the garlic and measure out the spices.
  • Layer the Crockpot
  • Add the halved potatoes to the bottom of the slow cooker. Sprinkle with a bit of salt, pepper, and paprika.
  • Add the Chicken
  • Place the chicken thighs or breasts on top of the potatoes. Season generously with Italian seasoning, garlic, salt, and pepper.
  • Make the Sauce
  • In a small bowl, mix the melted butter, heavy cream, and Parmesan cheese. Pour this mixture evenly over the chicken and potatoes.
  • Cook
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  • Serve
  • Once done, garnish with fresh parsley and additional Parmesan, if desired. Serve warm.
