Ingredients

  • 1 lb ground beef
  • 1 package cheese tortellini about 9 oz
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach fresh
  • 2 cloves garlic minced
  • salt and pepper to taste
  • olive oil for sautéing

Instructions

  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground beef, breaking it apart with a spoon. Cook until browned and just cooked through, around 5-7 minutes. Drain any excess grease.
  • Toss in the minced garlic and sauté for about a minute, until fragrant.
  • While the beef is cooking, bring a pot of salted water to a boil. Cook the cheese tortellini according to the package directions—usually about 3-4 minutes for fresh or 6-8 minutes for frozen. Drain and set aside.
  • Pour the heavy cream into the skillet with the beef and garlic, stirring well. Let it simmer for a few minutes until it starts to thicken.
  • Stir in the grated Parmesan cheese, mixing until melted and incorporated into the sauce.
  • Fold in the fresh spinach and let it wilt into the sauce.
  • Gently toss the cooked tortellini into the creamy beef and sauce mixture until evenly coated.
  • Taste and add salt and pepper as necessary.
  • Spoon the delicious creamy tortellini onto plates and optionally, sprinkle with additional Parmesan and freshly cracked black pepper before serving.
