Ingredients

For the filling

  • 2 cups fresh fruit (peaches, berries, or apples) Use any seasonal or your preferred fruits.

For the batter

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 cup milk
  • 1/2 cup butter (melted) Melt in the oven for convenience.
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • If using peaches, peel, pit, and slice them. For berries, rinse and remove any stems. Spread fruit evenly in the bottom of an 8×8-inch baking dish.

Batter Mixing

  • In a mixing bowl, combine flour, sugar, baking powder, and salt. Gradually whisk in milk and melted butter until a smooth batter forms.

Assembling and Baking

  • Pour the batter over the fruit in the baking dish. It will spread as it bakes.
  • Bake for about 30-35 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  • Cool for a few minutes before serving warm with whipped cream or ice cream.

Notes

For variations, swap fruits based on availability, and avoid overmixing the batter to keep it light and fluffy. Store in the refrigerator for up to three days, or freeze for up to three months.
