Ingredients
  

  • 1 whole lemon seeds removed, cut into chunks
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 unbaked 9-inch pie crust store-bought or homemade

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Filling: In a blender, combine the lemon chunks (with the peel), granulated sugar, eggs, melted butter, and vanilla extract. Blend until the mixture is smooth and well combined.
  • Prepare the Pie Crust: Place the unbaked pie crust in a 9-inch pie pan. Ensure the crust is evenly spread and pressed into the pan.
  • Pour the Filling: Pour the blended lemon mixture into the prepared pie crust.
  • Bake the Pie: Place the pie in the preheated oven and bake for 35-40 minutes, or until the filling is set and the top is lightly golden.
  • Cool the Pie: Remove the pie from the oven and let it cool completely on a wire rack before slicing and serving.
