If you’re looking for a savory and satisfying main course that’s not overly difficult to prepare, you’ve come to the right place. When you slow-cook beef tips and pair them with a velvety gravy, you get the perfect dish. The addition of fresh herbs just sends it over the top. Ingredients:

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup red wine (optional)
  • 3 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped, for garnish

Directions:

  1. Prepare the Beef Tips:
    • Season the beef tips with salt and black pepper.
  2. Sear the Beef Tips:
    • In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the beef tips in batches, searing them on all sides until browned. Remove the beef tips and set them aside.
  3. Cook the Onion and Garlic:
    • In the same skillet, add the diced onion and cook until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.
  4. Deglaze the Pan:
    • Pour in the red wine (if using) and scrape up any browned bits from the bottom of the skillet. Let the wine reduce by half.
  5. Combine Ingredients:
    • Add the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaves to the skillet. Return the beef tips to the skillet and stir to combine.
  6. Slow Cook the Beef Tips:
    • If using a slow cooker, transfer the mixture to the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender. If using the stovetop, cover the skillet and simmer on low for 2-3 hours, or until the beef is tender.
  7. Thicken the Gravy:
    • In a small bowl, whisk together the cornstarch and water to create a slurry. Stir the slurry into the beef and gravy mixture and cook for an additional 10-15 minutes, or until the gravy has thickened.
  8. Serve:
    • Remove the bay leaves and discard them. Garnish with chopped fresh parsley before serving. Serve the beef tips and gravy over mashed potatoes, rice, or egg noodles for a complete meal.
