Easy Brussels Sprouts Casserole is a delightfully creamy and cheesy dish that’s packed with flavor and topped with a golden breadcrumb crust. It’s not heavy or overly rich either. I think it’s a perfect autumn or holiday side dish, and if you’re not a fan of Brussels sprouts, feel free to substitute with another vegetable.

It will still be undeniably delicious! If you’re looking for a comforting & flavorful side dish that’s not overly complicated, you’ve come to the right place. When you bake tender Brussels sprouts and pair them with a creamy, cheesy sauce, you get the perfect casserole. The addition of a crispy breadcrumb topping just sends it over the top. I’ve really been in the mood for cozy, comforting dishes, and this creamy casserole reminds me of family gatherings and holiday feasts. Not a fan of Brussels sprouts? Don’t worry, it’s still delicious without them.

Kitchen Equipment Needed:

  • Large pot
  • Colander
  • Cutting board
  • Knife
  • 9×13-inch baking dish
  • Large mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Spatula or spoon

Ingredients:

  • 1 ½ pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon onion powder
  • ½ teaspoon ground nutmeg
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped fresh parsley (optional)

Directions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Brussels Sprouts:
    • In a large pot, bring water to a boil and add a pinch of salt. Add the Brussels sprouts and blanch them for 3-4 minutes until bright green and slightly tender. Drain and set aside.
  3. Make Cheese Sauce:
    • In a large mixing bowl, whisk together the heavy cream, minced garlic, Dijon mustard, onion powder, ground nutmeg, salt, and black pepper. Stir in the shredded mozzarella and grated Parmesan cheese.
  4. Combine and Transfer to Baking Dish:
    • Add the blanched Brussels sprouts to the cheese mixture and toss to coat evenly. Transfer the mixture to a 9×13-inch baking dish and spread it out evenly.
  5. Prepare Topping:
    • In a small bowl, mix the panko breadcrumbs with the melted butter until evenly coated. Sprinkle the breadcrumb mixture evenly over the top of the casserole.
  6. Bake:
    • Bake the casserole in the preheated oven for 20-25 minutes, or until the top is golden brown and the cheese is bubbly.
  7. Garnish and Serve:
    • Remove the casserole from the oven and let it cool slightly before serving. Sprinkle with chopped fresh parsley if desired.
