- 1 cup frozen mixed vegetables (optional)
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Directions:
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain the excess fat.
- Add the stew meat to the pot and cook until browned on all sides.
- Stir in the chopped onion and minced garlic, and cook until the onion is translucent.
- Pour in the beef broth and diced tomatoes. Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for 30 minutes, allowing the flavors to meld.
- Add the corn, pinto beans, kidney beans, green chilies, and potatoes to the pot. Stir to combine.
- Season with chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
- Cover and simmer for an additional 30 minutes, or until the potatoes are tender and the stew is thickened.
