For the Cake:

- 1 cup milk

- 1 cup brown sugar
- 2 tablespoons ground cinnamon
For the Cream Cheese Icing:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk
Directions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Prepare the Cake Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. In another bowl, mix together the mashed sweet potatoes, milk, eggs, vegetable oil, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Make the Filling: In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until smooth and creamy.
- Assemble the Cake: Pour half of the cake batter into the prepared baking pan, spreading it out evenly. Dollop spoonfuls of the filling mixture over the batter. Use a knife to swirl the filling into the batter. Pour the remaining cake batter over the filling, spreading it out evenly.
- Bake: Place the baking pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the Cream Cheese Icing: While the cake is baking, make the cream cheese icing. In a mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar, vanilla extract, and milk, beating until smooth and creamy.
