Sweet Hawaiian Crockpot Chicken is a delightful and juicy dish that’s slow-cooked to perfection with a sweet and tangy pineapple sauce. It’s not heavy or overly sweet either. I think it’s a perfect meal for busy weeknights or lazy weekends, and if you’re not a fan of bell peppers, feel free to omit them.

It will still be undeniably delicious! If you’re looking for a flavorful and easy dish that’s not overly complex, you’ve come to the right place. When you make tender chicken in a sweet Hawaiian sauce and pair it with rice or your favorite side, you get the perfect meal. The addition of pineapple just sends it over the top.   • Crockpot (slow cooker)

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1 can (20 oz) pineapple chunks, drained
  • 1 red bell pepper, sliced (optional)
  • 1 green bell pepper, sliced (optional)
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooked rice for serving
  • Fresh cilantro for garnish (optional)

Directions:

  1. Prepare the Crockpot:
    • Place the chicken breasts in the bottom of the crockpot.
  2. Make the Sauce:
    • In a mixing bowl, whisk together the pineapple juice, brown sugar, soy sauce, minced garlic, minced ginger, and black pepper until well combined.
  3. Combine Ingredients:
    • Pour the sauce mixture over the chicken breasts in the crockpot.
    • Add the pineapple chunks, sliced bell peppers, and sliced onion on top of the chicken and sauce.
  4. Cook:
    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Serve:
    • Once cooked, stir the sauce and vegetables to make sure they’re well combined.
    • Serve the sweet Hawaiian chicken over cooked rice.
    • Garnish with fresh cilantro if desired.
