Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 2-3 chipotle peppers in adobo sauce, minced (adjust to taste)
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 12 oz (340 g) pasta (such as penne or rigatoni)
  • Fresh cilantro, chopped (for garnish)

Directions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken, salt, and pepper, and cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Prepare the Sauce: In the same skillet, add the garlic, onion, and bell pepper. Sauté until the vegetables are soft and fragrant, about 5 minutes.
  4. Add Tomatoes and Chipotle: Stir in the diced tomatoes (with juice) and the minced chipotle peppers. Cook for 3-4 minutes to combine the flavors.
  5. Create the Creamy Sauce: Reduce the heat to medium-low and stir in the heavy cream and chicken broth. Simmer for about 5 minutes until the sauce thickens slightly.
  6. Combine: Return the cooked chicken to the skillet and stir to coat with the sauce. Add the cooked pasta and Parmesan cheese, tossing to combine everything well.
