Southwest Chicken Wrap

This Southwest Chicken Wrap is packed with bold flavors and fresh ingredients. It’s a quick and easy meal that’s perfect for lunch or a light dinner. With tender chicken, crisp vegetables, and a zesty southwest sauce, this wrap is sure to become a favorite!

 

Ingredients

For the Wraps:

  • 2 large flour tortillas
  • 1 cup cooked and shredded chicken (grilled or rotisserie works well)
  • 1/2 cup black beans (rinsed and drained)
  • 1/2 cup corn kernels (canned, fresh, or frozen)
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded lettuce

For the Southwest Sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

1. Make the Southwest Sauce:

  1. In a small bowl, mix together mayonnaise, sour cream, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper. Stir until smooth and set aside.

2. Assemble the Wraps:

  1. Lay a tortilla flat on a clean surface. Spread a generous layer of southwest sauce over the tortilla.
  2. Add shredded lettuce, chicken, black beans, corn, tomatoes, red onion, cilantro, and shredded cheese to the center of the tortilla.

3. Wrap it Up:

  1. Fold in the sides of the tortilla, then roll it tightly from the bottom to the top, securing all the ingredients inside.
  2. Slice the wrap in half diagonally for easier eating.

4. Serve and Enjoy:

  1. Serve immediately with extra southwest sauce or a side of salsa and guacamole for dipping.
