Southwest Chicken

This Southwest Chicken Wrap is packed with bold flavors and fresh ingredients. It’s a quick and easy meal that’s perfect for lunch or a light dinner. With tender chicken, crisp vegetables, and a zesty southwest sauce, this wrap is sure to become a favorite!

Ingredients
  

  • For the Wraps:
  • 2 large flour tortillas
  • 1 cup cooked and shredded chicken grilled or rotisserie works well
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn kernels canned, fresh, or frozen
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded lettuce
  • For the Southwest Sauce:
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • Make the Southwest Sauce:
  • In a small bowl, mix together mayonnaise, sour cream, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper. Stir until smooth and set aside.
  • Assemble the Wraps:
  • Lay a tortilla flat on a clean surface. Spread a generous layer of southwest sauce over the tortilla.
  • Add shredded lettuce, chicken, black beans, corn, tomatoes, red onion, cilantro, and shredded cheese to the center of the tortilla.
  • Wrap it Up:
  • Fold in the sides of the tortilla, then roll it tightly from the bottom to the top, securing all the ingredients inside.
  • Slice the wrap in half diagonally for easier eating.
  • Serve and Enjoy:
  • Serve immediately with extra southwest sauce or a side of salsa and guacamole for dipping.
