Ingredients: For the chocolate pudding layer:

  • 2 teaspoons baking powder

  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 cups boiling water

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a baking dish or casserole dish and set aside.
  2. In a mixing bowl, whisk together the flour, baking powder, salt, sugar, and cocoa powder for the chocolate pudding layer.
  3. Stir in the milk, melted butter, and vanilla extract until the batter is smooth. Spread the batter evenly into the prepared baking dish.
  4. In another mixing bowl, combine the sugar and cocoa powder for the topping. Sprinkle this mixture evenly over the batter in the baking dish.
  5. Carefully pour the boiling water over the entire mixture in the baking dish. Do not stir.
  6. Place the baking dish in the preheated oven and bake for 30 to 35 minutes, or until the top is set and the edges are bubbly.
  7. Remove from the oven and let cool for a few minutes before serving.
  8. Serve warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
