It’s not heavy or overly sweet either. I think it’s a perfect summer or any-time-of-year dessert, and if you’re not a fan of salted caramel, feel free to omit it. It will still be undeniably delicious! If you’re looking for a light & airy dessert that’s not overly sweet, you’ve come to the right place. When you make a creamy and smooth filling and pair it with the salty crunch of Ritz crackers, you get the perfect cake. The addition of salted caramel just sends it over the top. I’ve really been in the mood for something refreshing, and this dreamy cake reminds me of sunny days and celebrations. Not a fan of salted caramel? Don’t worry, it’s still delicious without it.
Kitchen Equipment Needed:
- 9×13-inch baking dish
- Mixing bowls

Ingredients:
- For the Cake:
- 2 sleeves of Ritz crackers
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup salted caramel sauce (store-bought or homemade)
- For the Homemade Salted Caramel Sauce (optional):
- 1 cup granulated sugar
- 6 tablespoons unsalted butter, cut into pieces
- 1/2 cup heavy cream
- 1 teaspoon sea salt
Directions:
- Prepare the Whipped Cream:
- In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside.
- Prepare the Salted Caramel Sauce (if making from scratch):
- In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a deep amber color.
- Add the butter and stir until melted and combined.
- Slowly pour in the heavy cream, continuing to stir until the mixture is smooth.
- Stir in the sea salt and let the caramel cool slightly before using.
- Assemble the Cake:
- In a 9×13-inch baking dish, arrange a single layer of Ritz crackers on the bottom.
- Spread a layer of whipped cream over the crackers.
- Drizzle a layer of salted caramel sauce over the whipped cream.
- Repeat the layers, ending with a layer of whipped cream on top. You should have about 3-4 layers.
- Drizzle the remaining salted caramel sauce on top of the final layer of whipped cream.
- Chill the Cake:
- Cover the baking dish with plastic wrap and refrigerate for at least 4 hours or overnight. This will allow the crackers to soften and the flavors to meld together.
- Serve:
- Once the cake is chilled and set, slice and serve.
Notes:
- This icebox cake can be made a day in advance and stored in the refrigerator until ready to serve.
- If you prefer a less salty flavor, you can reduce the amount of sea salt in the caramel sauce.
